Double Dare 2000 has a couple of episodes that were filmed in widescreen for whatever reason. Guessing they were just wanting to test out the format.
Drake and Josh had been assumed to be filmed in pan-and-scan, but edited in 4:3.
I think Barnyard was produced and rendered in widescreen, but not mastered in that format? I think I've seen a clip from a Vimeo reel or two.
Wonder Pets, according to a few animators on the show, had an alternate 16:9 widescreen (starting with the second half of season 2) version we have no footage of besides a clip from a reel.
The sixth season of Dora the Explorer was also produced in widescreen, source is a few images that are still up on nickjr.com.
Any other Nick shows/movies that were unreleased in widescreen?
