I found a track in "Intense Patriotism" that hasn't been listed yet!

"Land of Hope & Glory", composed by Edward Elgar and arranged by Chris Payne (in CPM) is played by Zorak when Space Ghost brags about how his show is still airing while Jeff Foxworthy's isn't.

Added, thanks! BTW this isn't found on Universal Production Music's site, it's at Warner Chappell's site though.

Also don't quote me on this, but the metal music during Unreasonable Demands in "King Dead" vaguely sound like Matt Maiellaro performing original music.
It wouldn't shock me considering he's done stuff for the later seasons and other Adult Swim shows.

Possibly found another track. Aha Music Identifier says that the music heard over the "Waiting" screens during the 1998 episodes is from the audio book of The Wonderful Adventures of Nils (of the Encore's World Masterpiece series). I found the video where it plays (skip to 3:02) - problem is, I don't know if this audio book used an existing piece or if it's an original composition. Anyone know?

EDIT: Found another one: "String Tension No. 2" by Michael Neville Hankinson [Parry Music], which plays in "Warren". I believe that's the last unidentified track for that episode!

EDIT: From the same album: "Stabs and Stings 2" by Michael Neville Hankinson [Parry Music] plays in "Batmantis".

EDIT 2: Last one for today: "Sangotay" by Mauricio Venegas [JW Media Music] also plays in "Chinatown".
