For the "extended movie" is the only thing that was added was the beginning?
If there was more, I sure didnt notice it.

Yes, I believe that's the only thing that was added. And that was actually the originally opening, but the studio decided it would be better to remove it to keep the Predators off-screen until they show up later.

(And before anyway asks, there will apparently not be a Director's Cut. Paul Anderson said in an interview that the PG-13 rated movie is what he always intended to the deliver, and the rumors of the film being R-rated until three weeks before the premiere was just an Internet rumor that got started.)

Hold up. In an interview after the movie hit theaters he said the movie was always intended to be R rated but Fox made him cut it down to PG13. When did this change? In fact, I believe someone had posted that on this board a few weeks ago.

A friend of mine, who is a big Paul Anderson fan, told me he read that in an interview as being the "official" story on the whole deal, that Anderson had always intended to deliver a PG-13 and that there was some stuff cut out, but just for pacing.

Personally, I could care less one way or the other. I love the movie and think it's fine the way it is. If an R-rated Director's Cut does exist, fine. If it doesn't and the Theaterical Cut is what Anderson wanted release, fine. I'm happy either way. :)

I was hoping in the extended cut, Predator and Lexy would get married and walk off into the sunset:D

Yeah but then the film would cross that thin line from being campy to just being ridiculous.

Your correct, after the movie came out Anderson talked about how Fox made him cut a bunch of things to get the PG-13 rating among them a plot about how the babies hatched from the people so fast. Personally it doesn't surprise me since Anderson has been known to contradict himself in interviews all the time.
